Hearty Salad Ideal for Autumn
Here's a simple yet elegant salad that features Rich Nut's Maple Pecans, purple kale, roasted butternut squash, and an easy apple cider dijon vinaigrette.

Ingredients
Salad
- 1 head purple kale, chopped
- 2 cups roasted diced butternut squash
- 1/2 cup Rich Nuts Maple Pecans, chopped
- 1/2 cup unsweetened dried cranberries
- ½ cup red onion, finely diced
Dressing
- 2 tbsp apple cider vinegar
- 3 tbsp olive oil
- ½ tbsp dijon
- 1 tbsp honey
- Pinch of salt and pepper
Directions
- In a small bowl, whisk together all of the ingredients for the dressing until combined.
- In a large mixing bowl, add the kale. Pour the dressing over the kale and massage the kale until tender
- Add the remaining ingredients, toss, and enjoy!
