Tahini is a Middle Eastern condiment made from toasted sesame. It adds a warmth to these roasted brussel sprouts with Rich Nuts Savory Sage Cashews. 

 

Tahini Brussels Sprouts with Savory Sage Cashews

Ingredients

Roasted Brussels Sprouts

  • 2 lb brussels sprouts, halved lengthwise
  • 1 tbsp olive oil
  • Pinch of salt and pepper
  • ¼ cup chopped Rich Nuts Savory Sage Cashews

Tahini Sauce

  • ½ cup tahini
  • 2 tbsp capers
  • 1 tbsp caper brine
  • 1 small lemon, juiced
  • 1 tsp minced garlic
  • Pinch of salt and pepper
  • Water to thin, if needed

Directions

  1. Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Pour the halved brussels sprouts onto the baking sheet and drizzle with the olive oil and a pinch of salt and pepper. Toss to combine.
  3. Roast in the oven for about 10-15 minutes until tender, then broil for 2-3 minutes for extra crisp if desired.
  4. While the brussels are roasting, make the tahini sauce by combining the tahini, capers, caper brine, lemon juice, garlic, and a pinch of salt and pepper into a food processor. Pulse until the mixture is smooth. Taste and adjust seasoning if necessary. If the sauce is too thick, add 1-2 tbsp of water at a time to thin until you reach a thick, pourable consistency.
  5. Once the brussels are done, pour them into a mixing bowl. Pour the desired amount of tahini sauce over top and toss to combine.
  6. Pour the brussels onto your serving platter, and top with chopped savory sage cashews and enjoy!
