Tahini Brussels Sprouts with Savory Sage Cashews
Ingredients
Roasted Brussels Sprouts
- 2 lb brussels sprouts, halved lengthwise
- 1 tbsp olive oil
- Pinch of salt and pepper
- ¼ cup chopped Rich Nuts Savory Sage Cashews
Tahini Sauce
- ½ cup tahini
- 2 tbsp capers
- 1 tbsp caper brine
- 1 small lemon, juiced
- 1 tsp minced garlic
- Pinch of salt and pepper
- Water to thin, if needed
Directions
- Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- Pour the halved brussels sprouts onto the baking sheet and drizzle with the olive oil and a pinch of salt and pepper. Toss to combine.
- Roast in the oven for about 10-15 minutes until tender, then broil for 2-3 minutes for extra crisp if desired.
- While the brussels are roasting, make the tahini sauce by combining the tahini, capers, caper brine, lemon juice, garlic, and a pinch of salt and pepper into a food processor. Pulse until the mixture is smooth. Taste and adjust seasoning if necessary. If the sauce is too thick, add 1-2 tbsp of water at a time to thin until you reach a thick, pourable consistency.
- Once the brussels are done, pour them into a mixing bowl. Pour the desired amount of tahini sauce over top and toss to combine.
- Pour the brussels onto your serving platter, and top with chopped savory sage cashews and enjoy!
